How it started

A grandmother's recipe. A family's obsession.

It started with a cast-iron skillet, a backyard garden, and my grandmother's handwritten recipe card — creased down the middle and stained with thirty years of cayenne and roasted tomato. She called it "the good stuff." We call it the beginning.

Every bottle of Ember Batch Co. sauce is made in small runs — never more than a few hundred at a time — using fresh peppers, real vinegar, and nothing you can't pronounce. No preservatives. No fillers. Just honest heat with honest flavor.

We're three people: a husband, a wife, and a kid who keeps stealing samples. We cook every batch ourselves, label every bottle by hand, and pack every order at our kitchen table. That's not going to change.

The Process

Slow-roasted in cast iron. Fermented when the recipe calls for it. Blended fresh, never heat-pasteurized into submission. The texture is real because it is real.

How spicy are your sauces, really?

Sunday Morning is genuinely mild — great for people who want flavor without heat. Back Forty has real warmth, the kind that builds rather than burns. Ember's Edge is legitimately hot: we're talking visible heat on the first taste. We use the Scoville scale as a guide but describe flavor first, always.

What are the ingredients — no really, all of them?

Every label lists every ingredient, full stop. No 'natural flavors,' no 'spice blend' catch-alls. Sunday Morning: Fresno peppers, apple cider vinegar, garlic, salt, roasted tomato. Back Forty: habanero, jalapeño, apple cider vinegar, smoked paprika, garlic, salt. Ember's Edge: ghost pepper, cayenne, red wine vinegar, garlic, cumin, salt. That's it.

How long does a bottle keep?

Unopened, our sauces keep for 12 months in a cool pantry. Once opened, refrigerate and use within 3–4 months. The acidity from real vinegar is the preservative — no artificial anything is doing that job for us.

Can I cancel or skip my subscription?

Yes, anytime. Log into your account, hit 'Manage subscription,' and skip or cancel — no confirmation emails asking if you're sure, no retention offers. We'd rather you come back when you're ready than feel trapped.

Do you ship outside the US?

Not yet. We ship everywhere in the continental US, plus Hawaii and Alaska. International shipping is something we'd like to offer but the logistics for food products are complicated — we're working on it.

Are your sauces gluten-free and vegan?

Yes and yes. All three sauces contain no gluten-containing ingredients and no animal products. We make them in a home kitchen that also handles wheat and dairy, so we can't call them certified allergen-free — but the sauces themselves contain none of those things.
